Will I lose my Google rankings?

Not if the move is done right. Every old URL gets a 301 redirect to its new address, meta titles and descriptions move over, and we check indexing in Search Console after launch.

Can my old store stay online during the move?

Yes. The new store is built in parallel, and the domain switches only when everything is ready and checked.
